GENERAL MANAGER

DUTIES AND RESPONSIBILITIES

Production and Bakery Operations Management

• Oversee daily bakery production, including production planning, ingredient preparation, mixing, dough processing, baking, cooling and packaging, ensuring production targets are achieved and customer orders are fulfilled on time.
• Monitor production efficiency, raw material utilisation, product yields, wastage and equipment performance, implementing corrective measures to minimise losses and improve productivity.
• Coordinate production schedules with sales, procurement and distribution teams to ensure optimal capacity utilisation, consistent product availability and timely delivery of finished bakery products.

Raw Material Procurement and Quality Control

• Oversee procurement planning and inventory management for flour, yeast, fats, sugar, additives, packaging materials and other production inputs, ensuring availability at competitive costs.
• Apply knowledge of flour milling processes and wheat flour specifications to assess flour quality, evaluate suppliers, manage technical supplier relationships and ensure that raw materials meet bakery production requirements.
• Enforce quality assurance, food safety, hygiene and traceability procedures throughout production, storage and distribution, ensuring consistent product quality and compliance with applicable regulatory standards.

Financial Management and Cost Control

• Develop and manage operational budgets, monitor production expenditure and analyse costs relating to raw materials, labour, energy, packaging, maintenance and distribution.
• Monitor recipe costing, ingredient consumption, portion control, production yields and product wastage to maintain target margins and improve overall profitability.
• Review sales revenue, operating expenses, cash flow and departmental financial reports, identifying cost-saving opportunities and implementing measures to achieve agreed financial targets.

 Business Development and Commercial Performance

• Develop and implement strategies to grow bakery sales, expand distribution networks and strengthen relationships with wholesalers, retailers, supermarkets, hotels, restaurants and institutional customers.
• Monitor market demand, competitor pricing, customer feedback and product performance to guide pricing decisions, product development, promotional activities and market expansion.
• Oversee sales performance, order fulfilment and distribution efficiency, working with the commercial team to improve customer retention, increase revenue and minimise product returns and distribution losses.

People Management and Business Performance

• Lead and supervise production, quality assurance, procurement, sales, distribution, warehouse and administrative teams, establishing clear responsibilities, performance targets and accountability measures.
• Oversee equipment maintenance planning, production workflow improvements and workplace safety procedures to minimise downtime, maintain operational continuity and ensure a safe working environment.
• Prepare and present regular management reports on production, sales, costs, stock levels, profitability and business performance, using operational data to guide strategic decisions and drive continuous improvement.

KEY REQUIREMENT SKILLS AND QUALIFICATION

• Degree in Business Administration, Operations Management or a related field.
• At least eight (8) years of relevant management experience, including substantial experience in a flour milling company, preferably in wheat flour production.
• Strong practical knowledge of wheat milling processes, raw material procurement, production planning, quality control, food safety and inventory management.
• Demonstrated track record in business growth, cost reduction, operational efficiency, revenue growth and profitability improvement.
• Proven experience managing multidisciplinary teams, operational budgets, supplier relationships and business performance.
